Integrate with Ollama for local GenAI features

This probably has been discussed before but it may worth considering exploring Ollama (local model serving) integration.

It could help on analyzing portfolio performance, provide a general conversational interface and help on data cleaning/import (e.g. converting PDF statements to CSV/JSON) among other use cases while preserving the privacy-first/local nature of Wealthfolio.
