Changing path of projects file

Hi, it's not really an issue, more a question. I searched the code for the path of the projects file and didn't find it. My programming skills aren't the best. Perhaps that is an issue :-)

We want to use the desktop version of Scratch jr in school. There is an HDGuard installed, so no child could damage the system. Every start, files are "reset" to default. So the projects of the kids are lost too. Now I want to change the path to a server, so that the files are save. Is this possible and where to find this path?
