Ottehr - Intake - Preferred Name Not Displayed Across Screens

Description:
Given a patient has entered a preferred name during intake, this name should be displayed across all relevant screens where the patient's name appears (except for the "Review and Submit" screen). Currently, the preferred name is not displayed consistently across screens, and instead, the formal name appears in its place.

Steps to Reproduce:

1. Start the intake flow and proceed to the "About Patient" screen.
2. Enter a preferred name for the patient.
3. Navigate through the intake screens where the patient’s name should appear.

Expected Result:
The preferred name is shown in all areas where the patient's name is displayed, except on the "Review and Submit" screen.

Actual Result:
The preferred name does not display on screens where the patient's name appears, except on "Review and Submit."
