I forgot what else I had to say here, but now UV_VENV_SEED is available (astral-sh/uv#10715) I think this can be closed. It's certainly better than having --seed as the default for everyone or a specific Meltano setting to toggle it.

Maybe a note in the Meltano docs would be good in case anyone runs into this issue as well?

Yeah, that sounds good. We can also mention UV_EXCLUDE_NEWER while we're at it.

UV_VENV_SEED was shipped with uv 0.5.21.
