This is one of the big gripes with signal, with lots of discussion but no positive response from the developers, since mid 2021. It's a very popular feature request that seems to get closed down every time it's asked.
Custom chat colors should be for the incoming message not the outgoing.

Just for me to understand: you are asking for an option to change the colour of the message bubbles of one's communication partner (but not of one's own)? Could you maybe link the corresponding issue(s) in Signal?

The sad thing is they had the colors in that way previously. They changed it despite many people vouching against it.
My issue got closed quickly as well: signalapp/Signal-Android#8258
There has been a lengthy discussion thread on this, but can't find it anymore.
Personally, I am in the process of switching to Molly anyways (currently not possible, because molly has to catch up with the current Signal version), because having two backup copies around with a huge size doesn't work for me. But… "fixing" the colors would be a second killer feature for me!
Is there an existing request for this?
