zapret: set NIX_CFLAGS_COMPILE

Use tag instead of rev.
Set NIX_CFLAGS_COMPILE to let zapret know it's own version. Though hash is dummy.

  • made sure NixOS tests are linked to the relevant packages

• Tested basic functionality of all binary files (usually in ./result/bin/)
