chore: bump outdated deps (tari-project#1496)

Description

- bumped outdated packages (except for react for now) - no breaking
changes
- removed packages no longer needed - `@sentry/vite-plugin` and
`tauri-plugin-sentry-api`
- small lint fix after updating
